Polvo
Polvo (Octopus vulgaris), the common octopus, encloses its innards in a hood and has eight tentacles that are nice as a salad or in caldeirada and truly superb when baked in the oven. Smaller polvos, known as the horned or curled octopus (Eledone moschata) and polvo cabeçudo (Eledone cirrosa), taste of next to nothing, if you buy them as skinned, deep-frozen chunks in the supermarket. Dried and grilled polvo tentacles and roe sacs are favourite snacks at markets and festivals. Wrapped in telltale clouds of smoke, the small stalls offering this specialty at exorbitantly high prices exude unmistakable fumes and are therefore easy to locate. As with genuine goat’s cheese, this delicacy will split novices´ opinions into completely opposing camps: outraged revulsion on one side and love at first bite on the other, followed by lifelong addiction.
