Camarão
Camarão, the everyday shrimp, is called, for instance, camarón in Spain, crevette in France or Granat in Germany. Its representatives are the common prawn (Leander sp.) and the pink shrimp (Palaemon serratus), found all along the European Atlantic coast. This is also the home of the smaller varieties of brownish sandy shrimp (Crangon vulgaris). Market vendors differentiate neither these species, nor other varieties caught far out at sea, like the Mediterranean shrimp (Parapandalus narval). They all turn up as camarão at the fish market, and no matter what size, the only place to get it fresh is right there. Most restaurants and marisco outlets offer frozen versions, chemically preserved and presented as “freshly cooked”.
