Fresh tuna that deserves this name has an intense light red colour, a rare commodity at the market and thus correspondingly expensive. A good way of estimating the age of the meat is to look at the barriga, provided it comes from the same fish: This is the first part to deteriorate, so it may already have an unattractive grey colour while the fillets still look reasonably fresh.
