Bacalhau (Gadus morrhua), the Atlantic cod, is sold neither fresh nor as a whole and you will seek it in vain at the fish stall. Instead, it is available in the supermarket, dried, salted and conveniently portioned. Not everyone likes its characteristic, strong flavor but those who do will need to leave it to soak in freshwater, for up to 24 hours, to remove the salt before further preparation.
