The genuine cuisine of the Algarve is dominated by fish and seafood from the Atlantic Ocean and the agricultural produce of the fertile Barrocal area - with many influences from Portugal's former colonies and the Moorish period of occupation. Guests eating out in one of the many restaurants in the Algarve will today enjoy specialties from all over the world together with the inevitable dishes of the international tourist gastronomy. Portugal is one of the largest wine producing countries in the world. Red wine, preferably from the neighbouring Alentejo region, is very popular at lunch and dinner, whereas the local wines from the Algarve only recently regained some reputation due to modern cellar technologies.
